Soft Pretzels (+ Bagel option)

Today I wanted to share with you a recipe for these delicious soft pretzels. The recipe is a bit time consuming and tricky at some parts, but in the end it’s all worth it! 😊


What makes these pretzels soft and chewy is the fact that we boil them in water mixed with baking soda before baking them. This is the secret to getting that golden brown crust and yummy pretzel flavor!


I also made bagels out of this dough. All I did was instead of making a pretzel shape I made a bagel shape (obviously πŸ˜‚). And I boiled them in a different water mixture. I used less baking soda than in the pretzel version, and I added some salt and honey. I boiled the bagels a bit longer as they were a bit thicker than the pretzels.

  • 4 Β½ cups flour
  • 2 teaspoons salt
  • 1 packet dried yeast
  • 1 Β½ tablespoons sugar
  • 1 Β½ cup lukewarm water
  • egg wash
  • salt ( and/or sesame seeds, poppy seeds, grated cheese..)

For pretzels:

  • 1l water
  • 6 tablespoons baking soda

*For bagels:

  • 1l water
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 2 tablespoons honey
  1. In a large bowl combine the flour, salt, dried yeast and sugar. Add in the lukewarm water and form a dough. Cover the bowl with a kitchen towel and leave the dough to rise for 2 hours.
  2. Once the dough has risen, knead it on a lightly floured surface. Divide the dough into 8 large pieces or 16 smaller ones, depending on how big you want your pretzels to be.
  3. Roll each piece of dough into a long rope, twist the two ends and press onto opposite sides to make a pretzel shape*.
  4. Bring the water + baking soda to a boil and boil each pretzel for 30 seconds.
  5. Place the pretzels on a baking sheet lined with parchment paper and brush each of them with egg wash. Sprinkle your favorite toppings on the pretzels and bake them for 15-20 minutes in 225Β°C/435Β°F.

* If you want to make bagels, roll each piece into a log shape and join the ends to form a circle. Mix the water, baking soda, salt and honey and bring to a boil. Boil each bagel for 1 minute per side. Bake for 20 minutes in 225Β°C/435Β°F.
